Pizza night is one of our favorites here at the Thompson house. We have tried a variety of different doughs, toppings, sauces, etc. We cook them in the oven or on the grill (which is my favorite). Sometimes we make it a competition to see who can make the best pizza. When I first found this recipe I thought there was no way this could be good. It must be one of those Pinterest Fail recipes. Even though I didn't think this recipe could be good, something inside of me was still very curious, so I decided what the heck I will give it a try. I just so happened to have the needed ingredients on hand so that made me want to try it even more.
I did as the directions said and mixed 1 cup of plain greek yogurt with 1 1/2 cups of self rising flour in a bowl until the dough came together. Then I floured my kitchen counter generously with more self rising flour in order to knead the dough until it was no longer sticky. I had to add some more flour to help with this process. It took about 8 to 10 minutes to knead the dough.
At this point I thought to myself...hmmm this might actually work. I rolled the dough to the desired thickness we wanted. Next time I might even use my Kitchen Aid pasta attachment to make a flatbread pizza. We topped the pizza with our desired sauces and toppings and now it was ready to go in the oven. We baked it at 450 degrees for about 10 to 12 minutes. I kept look at it constantly through the oven window to see how it was looking. It was ready to take out of the oven and now it was time for the real test.
Believe it or not it was actually really good. It has a crisp bottom with a thick and fluffy texture in the middle. It also had a little tiny taste of sour dough bread but it wasn't overbearing. It was quite delicious! We had added this to the many pizza dough recipes we like to use for pizza night. Like my husbands say, "It's a keeper!"
